These muffins are not only easy to make, it requires a household staple that many of us already have in our homes: pancake mix!
The pancake mix gives the muffins a super soft and fluffy texture. The nutmeg really gives them a nice taste, accompanied with the sugar and cinnamon mixture on top. There are very little ingredients required for this recipe, so that means fewer dishes you would have to wash, and fewer products you need to buy. If you want to make more servings, doubling the recipe is no hassle.

Sugar and spice muffinsAdapted from “Cooking in Style the Costco Way”
Makes 12 servings 2 ½ cups buttermilk pancake mix2/3 cup water ½ cup sugar¼ cup vegetable oil1 large egg½ teaspoon grated nutmeg
Topping:4 tablespoons butter½ cup sugar2 teaspoons ground cinnamon
1. Preheat oven to 400°.2. In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg, and nutmeg until just blended.3. Spoon batter into a lightly greased or paper-lined 12-cup muffin pan, filling each two-thirds full.4, Bake for 12-14 minutes, or until a toothpick inserted in the center comes out clean.5. To prepare the topping, melt butter and set aside. In a small bowl, stir together sugar and cinnamon.6. While muffins are still warm from the oven, dip into melted butter and then cinnamon-sugar mixture.
